YAKI NASU
|
|
6 Japanese eggplants
|
|
Green onion
|
|
Soy Ginger
|
|
Grated ginger
|
|
Soy sauce
|
|
Bonito flakes
|
|
Mustard miso
|
|
4oz Shiromiso
|
|
2T Sugar
|
|
1T Mirin(cooking sake)
|
|
1/2 cup Dashi stock
|
|
Mustard
|
|
Ume vinegar
|
|
2T Ume
|
|
2t Mirin
|
|
2t Soy sauce
|
|
2T Dashi stock
|
|
Sesame sauce
|
|
1 1/2T Sugar
|
|
4T Sesame
|
|
1 1/2 Soy sauce
|

1-2T Dashi stock

|
Directions:
|
|
1) Cut off stems. Mince green onion
|
|
2) Grill eggplant on wire grill until skin is burnt.
|
|
3) When the eggplant is soft, take off of grill and peel the skin off, and cut into bite size pieces. Garnish with minced green onion and serve with your favorite sauce, and enjoy!
