| Ingredients: |

Shiitake Omlette
|

4 oz Shiitake mushroom
|
|
Salt, Pepper
|
|
1/2 bunch Mitsuba (Trefoil)
|
|
8 pc Egg
|
|
1 pc Chicken breast
|
|
1T. oil
|
|
A: (1/2 t. Salt Pinch pepper 2t. Soy sauce)
|
|
Directions:
|
|
1) Slice shiitake mushroom into small bite-size pieces. Slice Chicken into 1 inch thick strip and season with salt and pepper. Cut mitsuba into 1 inch length.

|
2) Heat oil in frying pan and stir-fry chicken. Throw in shiitake mushrooms and when shiitake mushrooms become soft, add A and put on side.
|
|
3) Heat oil in clear frying pan and add beaten eggs. When half-done add 2 and put in middle. Add a little mitsuba and fold egg over. Turn over and serve on plate.
